- Slice the eggplant vertically or horizontally each about 1 inch thick. Then, heat oil and fry the eggplant. After frying, place the eggplants on a plate with kitchen paper to drain the fat away and sprinkle with salt and pepper to taste.
- In a saucepan, heat oil and stir onion, when onions become translucent and golden, add chopped garlic. Over medium heat add meat, and cook until browned and then add onions and garlic again then continue frying for 3-4 minutes.
- After the meat being cooked, add cubes of tomato, red and green peppers, and stir to mix with the meat. Then, put salt and pepper, add tomato sauce, chopped parsley and stir for a minute.
- In an oven pan, spread the meat sauce on top of the eggplants and finally, bake it at 250°C for 20 minutes.
